Sometimes the simplest ideas are the most brilliant. This is a picture of a grapefruit brulee from Bon Appetit. All you do is slice a grapefruit in half, sprinkle some sugar on each half, and then crystallize the sugar with a blow torch or on the broil setting of your oven.  Plus, since this is mainly the natural grapefruit this makes it a pretty healthy dessert. Seeing this I had one of those “why didn’t I think of that?!?!” moments because I just thought the idea is so great.
